ANN ARBOR, MI -- Ayse Uras has loved to cook since her youth.

She was born in Turkey and held onto homemade Turkish recipes she learned during her childhood. She wanted to share her cuisine with the community, which led her to open Ayse’s Café, a Turkish restaurant in northern Ann Arbor. The restaurant has been in the area for 27 years, Uras said.

“I try to make everything as how I remember from my childhood. I don’t change the menu because I’m thinking they won’t like it. Some dishes take some time for people to get used to,” Uras said.

For example, Noah’s Pudding is one of her favorites that drives curiosity among customers. The pudding is made with wheat, berries, dried fruits and nuts but the dish is a staple, she said.

Ayse’s Café has an extensive lamb menu. Customers enjoy lamb shanks, braised lamb with mushrooms and stews. The lamb-stuffed pepper, served with bulgur salad is also one of the cafe’s top items. The restaurant also makes a variety of vegetable stews, which are almost all vegan and gluten-free, she said.

The menu also has rice or bulgur to pair with entrees, including rice mixed with peas or carrots. Lentil soup has always been a staple item at Ayse’s Cafe, as is yayla soup, which is made of yogurt, rice and mint, she said.

Beyond serving customers, Uras prepares meals for the homeless community. Since March 2020, she dedicated her Tuesdays to provide five trays of food for homeless shelters.

“I just love cooking. That gives me pleasure more than the customers. I’m so grateful I have this,” Uras said. “It’s something to look forward to ... every morning.”

Much of the cuisine is served in smaller plates, which allows customers to order a little bit of anything.
