After bringing schnitzels, bratwurst and the Bavarian pretzel to Bixby Knolls, German-born restaurateurs Bjoern Risse and Bülent Yildirim will bring modern California cuisine, with some Mediterranean flair, to the neighborhood at their upcoming restaurant Wood & Salt Tavern.
“I wanted to try something new because I want to eat non-German food,” said Risse, who plans to open the Atlantic Avenue restaurant by the end of August.
Wood & Salt Tavern is located just down the street from the business partner’s first Long Beach restaurant Rasselbock Kitchen & Beer Garden, which opened in 2016.
The new restaurant took over the 2,200-square-foot space that once housed the short-lived Tokyo Guild at 4262 Atlantic Ave.
The interior, which features high ceilings with communal tables, banquet seats and a bar, will remain closed until restaurants are allowed to have dine-in customers again. But there will be a total of about 60 outdoor seats placed in the front patio, sidewalk and the back parking lot.
The menu will focus on dishes cooked in a wood-fired grill, including steaks, fish and seafood, plus handmade pastas, salads, vegetarian and vegan dishes and shareable plates.
Here are five dishes that Risse recommends:
Charred Corn Croquetas
This vegetarian dish will be served with pickled Fresno chilis, garlic and aioli on a ricotta salad while the corn is roasted on the wood-fired grill. “They are great for sharing and taste amazing and it’s one of my favorite dishes on the menu,” Risse said.
Grilled Mary’s Farm Half Chicken
This internationally-influenced chicken dish is paired with sumac, a house-made yogurt, grilled squash and dukkah, which is a Middle Eastern mix of herbs, nuts and spices. “Sumac is a Middle Eastern dried red spice that complements our homemade yogurt perfectly,” Risse said.
Grilled Whole Dorade
Cooked on the wood-fired grill, the fish, which comes from Mediterranean Sea, is served whole with Sicilian-style caponata and olive tapenade. “It has this nice smoky flavor from the wood-fire grill. It can be shared but you can eat it by yourself,” he said.
Whipped Sheep’s Milk Ricotta
Served with grilled bread from Gusto, a celebrated Long Beach bakery, plus figs and aged balsamic, “It’s a light summery appetizer that I think is great because it’s refreshing,” Risse said.
Pacific Swordfish Meatballs
This is a shareable dish that may throw some off at first since most people don’t associate meatballs with fish. It’s served with polenta and pine nuts doused with a puttanesca sauce. “They look like meatballs and when you try them they don’t taste like meatballs, obviously, so it’s like a medium soft consistency and a very fresh swordfish meat flavor, and it’s great,” Risse said.
