As Philly’s indoor dining ban rages on, more restaurants are hopping on the growing ghost kitchen bandwagon to ramp up online orders for takeout and delivery.
From fried chicken to ice cream to familiar crab cakes, here are the newest places to check out in Philly right now:
Fuku
The Deal: Chef, podcaster and Netflix star David Chang debuts a delivery-only ghost kitchen in Philly focused on fried chicken sandwiches. Fuku was formerly available in Philly as a concession stand at Lincoln Financial Field, which hasn’t hosted fans during the novel coronavirus pandemic. The new spicy fried chicken sandwich — revamped with a six-ounce chicken breast cutlet instead of chicken thighs — brines poultry in habanero chile puree. Pickles and a spicy Fuku mayo round out the order on a Martin’s potato roll. There are also versions with shredded cabbage and a “knockout” sauce, bacon and buttermilk ranch, or a sweet and spicy glaze. Tenders and waffle fries are on the menu, too. Fuku also sits in Miami, D.C., and NYC, where Fuku got its start at the original Momofuku Noodle Bar.
Where: The sandwiches are prepared in a Northern Liberties “ghost kitchen” — built to service delivery apps without the burden of on-site customers — operated by Reef Kitchens, a tech brand with a $1 billion valuation that parks its cooking trailers in their parking lots all over the country.
Dates: Delivery launches on Thursday, December 17 via UberEats, DoorDash, Grubhub, and Postmates
Cost: Philly customers will receive free delivery via Uber Eats through the end of the year.
Maude & Mabel’s Fine Creamery
The Deal: Fine-Drawn Hospitality’s virtual food hall The Commons just debuted a new in-house ice cream venture. Seasonal creations include egg nog ice cream with gingerbread cookie butter and “M&M” (matcha ice cream with a miso-caramel swirl). “The Golden Ticket,” adorned in gold leaf, features dark chocolate ice cream, crushed Wonka Bar, caramel, and Nerds. The ice cream shop joins The Commons’ existing ghost kitchens Agea, Ghost Chicken, Philadelphia Wing Shop, The Post, Sunset Social, and Walnut Street Cafe.
Where: Available for delivery via Caviar, Doordash and GrubHub, or pickup out of The Post in University City (129 S. 30th Street)
Cost: All pints are $6.50
Garces Trading Company
Garces Trading Company returned this week as a massive ghost kitchen sending out beloved dishes at chef Jose Garces’s restaurants. The multi-part menu, available for takeout and delivery out of one hub (The Olde Bar in Old City District), includes crab cakes and fried chicken (The Olde Bar); pulpo a la Gallega and jamon serrano (Amada); and baby back ribs and the new Bing Crosby burger of the month (Village Whiskey). In addition, a new online marketplace offers takeout cocktails, cocktail kits and beer from The Olde Bar. There’s also baked goods, holiday packages, and meal catering for two or more, along with comeback dishes from Volver and J. G. Domestic.

Click on Garces Trading Company’s website to order meals and sign up for virtual Garces experiences, which include Zoom calls with the Iron Chef himself, tutorials on making a gingerbread house with Garces’ pastry chef, and more. To engage at-home chefs, Garces debuted Cooking Space (a series of cooking-show style videos) and “Latin Live,” (interactive cooking classes), and professional consulting services. Garces also just debuted a new partnership with Boisset Collection wines.
